I finally got around to trying out a carrot cake cupcake and I was not disappointed! The cake is heavy and full of moisture and pineapple and carrot goodness topped with a not-too-sweet cream cheese frosting.

A couple new things I've tried -- Chocolate cupcakes with Butterfinger frosting (awesome!) and Mini Cheesecakes! The ones pictured are peanut butter cheesecake with oreo crust topped with chocolate ganache and chopped up pb cups.
These cupcakes were for a coworker's mom who loves bowling! I thought they turned out pretty cute, I made the balls and pins out of gumpaste. The cupcakes were chocolate with carmel butter cream.
This cake was for an old coworker's little girl who is turning 6 this week. I LOVED the theme as I am a huge zebra print fan as well as pink and black! The main cake was snickers with the carmel buttercream and the cupcakes were banana with the carmel buttercream. I used fondant strips for the zebra stripes and used chocolate & vanilla almond bark (colored) to make the cupcake toppers. :) I think it turned out cute and I think the Birthday girl liked it!
I hope you all had a wonderful and safe 4th of July! :) I had to work at the hospital, so I made these festive cupcakes for our Holiday Potluck! They were Red Velvet with Cream Cheese Frosting.
I made 150 cupcakes for my cousin Oliver's graduation reception. He had snickers, milky way and key lime. Some of their family friends made this display out of ice racing tires, since Oliver is an avid ice racer in the winter months. Pretty creative! Congratulations, Oliver! :)
This was a recipe I've had bookmarked for awhile, but hadn't had a reason to make them. My cousin's birthday was yesterday, so I decided to make her some birthday cupcakes! They were quite tasty, the frosting certainly tastes like a strawberry malt. If you are not a fan of malt powder, these are probably not the cupcakes for you, but if you are -- you're in luck! :) I should have colored the frosting pink because it looks a little blah, but that certainly doesn't affect the taste! I also was running low on powdered sugar, and my frosting looks a bit droopy. I struggle with cream cheese frosting regardless, why does it have to taste so good and be so difficult! :)
You can find the recipe HERE. :) I saw these yummy looking cupcakes on one of my favorite blogs, How Sweet Eats, and immediately wanted to make them. They were easy, and Andy liked them, I am not 100% sold. I thought the frosting was a little much. I think if the frosting was paired up with a chocolate cupcake, and used in a lesser amount, perhaps some as filling, that might be a better match. Maybe just adding some chocolate ganache to the tops of these would take them up a notch, too. :) Either way, they're worth a try if you like Peanut Butter! :)
Here are some photos of a cake I made this weekend. The flavor was Key Lime with cream cheese frosting. I made all the decorations on it with Wilton Gum Paste. :) You can find the recipe for the cake HERE. The cupcakes that went along with the cake were the Cherry Almond Vanilla flavor. I used half a cherry and piped frosting on the top to kind of mimic a fishing bobber. :)
These were the final kind of cupcakes I made for Christmas, I'm a little late at getting them posted, but better late than never, right? I had made a different recipe for Red Velvet cupcakes before and hadn't been too impressed. A coworker suggested I try a recipe from Paula Deen, so that's what I went with this time around. I think they definitely had more flavor than the previous recipe I had tried. The frosting was a huge hit with my almost 2 year old Niece! Who doesn't love cream cheese frosting!? :) I'm still not sure what all the hype over "red velvet" is about, but to each their own.
