If you like coconut, consider this your warning that you WILL want to sit down and eat this entire batch of frosting with a spoon! This stuff is DELICIOUS and super addicting!!! These were cupcake #3 out of the 4 kinds I made for the Christmas gatherings. I over baked them a bit, but aside from that, they were very good and I would absolutely make them again. :) I found the recipe on www.howsweeteats.com, one of my FAVORITE blogs. In keeping with the Christmas theme for cupcakes, I was looking for something different rather than the normal Chocolate/White cupcakes. I found this recipe for Gingerbread cupcakes and thought I'd give them a try! I am glad I did because I thought they were delicious! I found the recipe on Tidy Mom blog, which you can find HERE. If I had more time, I would have made little gingerbread men to put on top, but I opted for the chocolate "snowflakes" instead for a garnish. These made the whole house smell wonderful, both in and out of the oven!

I hope you all had a wonderful holiday season and got to relax a little in-between all the hustle and bustle that seems to go along with this time of year! I had the opportunity to make some cupcakes for Christmas gatherings, which I will post over the next couple weeks. My goal for 2012 is to post at least one new recipe a week - that seems pretty do-able, don't you think?! :) The first of the Christmas cupcakes is the Peppermint Mocha Cupcake which I found the recipe for on Baker's Royale website, which you can find HERE. The cupcake recipe was easy and delicious. I did not make the frosting as stated in the recipe, I made a basic butter cream to which I added peppermint extract and crushed candy canes. I added a candy cane on top and added a little "North Pole" to make it a little festive. :) Enjoy! |
