If you like coconut, consider this your warning that you WILL want to sit down and eat this entire batch of frosting with a spoon! This stuff is DELICIOUS and super addicting!!! These were cupcake #3 out of the 4 kinds I made for the Christmas gatherings. I over baked them a bit, but aside from that, they were very good and I would absolutely make them again. :) I found the recipe on www.howsweeteats.com, one of my FAVORITE blogs. In keeping with the Christmas theme for cupcakes, I was looking for something different rather than the normal Chocolate/White cupcakes. I found this recipe for Gingerbread cupcakes and thought I'd give them a try! I am glad I did because I thought they were delicious! I found the recipe on Tidy Mom blog, which you can find HERE. If I had more time, I would have made little gingerbread men to put on top, but I opted for the chocolate "snowflakes" instead for a garnish. These made the whole house smell wonderful, both in and out of the oven!
I know you are probably thinking ... eww ... because that's what I thought the first time my dad told me he made this cake. BUT ... just hear me out ... It's actually REALLY tasty! You can't taste the tomato at ALL (I PROMISE, even my husband agreed and he is PICKY). I am not going to have these on my list of available flavors, because green tomatoes are not readily available, but it's a unique recipe I thought I'd share on here. :) TRY IT! Spiced Green Tomato Cake
2 1/4 cups Sugar 1 cup Vegetable Oil or melted shortening 3 Eggs 2 tsp. Vanilla 3 cups Flour 1 tsp. Salt 1 tsp. Baking Powder 1 tsp. Cinnamon 1/2 tsp. Nutmeg 1 cup Pecans or Walnuts (I left this out) 1 cup Raisins 2 1/2 cup diced green tomatoes Coconut (I left this out, also) Brown Sugar Preparations: Preheat oven to 350. In mixing bowl, beat sugar, vegetable oil or shortening, eggs and vanilla until smooth and creamy. Sift together flour, salt, baking powder, cinnamon and nutmeg; slowly beat into egg mixture. Blend well. Stir in pecans, raisins and tomatoes. Pour into greased 9x13 pan. Top with Coconut (If desired) and sprinkle with grown sugar. Bake for 1 hour, or until toothpick comes out clean. Serves 12. I made a few cupcakes and topped them with cream cheese frosting I had left over from a previous cake and put the rest in a pan and as per my Dad's instructions, topped with powdered sugar frosting. I preferred the pan/powdered sugar frosting method. The cupcakes seemed slightly more dry and the powdered sugar frosting just seeps down into the cake creating a yummy sweet layer on top. Powdered Sugar Frosting Water (like 1/8 cup) Powdered Sugar Vanilla Mix to desired consistency and drizzle on top of cake and EAT! :) I made these cupcakes for our annual Potato Days party. I used the chocolate cupcakes recipe from the Snickers Cupcakes and made up a Peanut butter frosting out of butter/peanut butter/vanilla and powdered sugar. After I piped it on the cupcakes, I melted some milk chocolate chocolate chips and mixed it with a little milk to get a thinner consistency and then drizzled it on top of the cupcakes and garnished with some candies. They looked yummy and were a hit!
I found this recipe on www.Sprinklebakes.com and adapted it into my own version. The recipe called them Triple Salted Carmel Cupcakes, well ... I tried the swirly carmel decorations for the top and they did not turn out, and I omitted the 2nd carmel sauce that was for the frosting because I had excess from the carmel filling and the ingredients were nearly identical, so mine only have ONE kind of carmel to go with the brown sugar cupcakes. :)
The carmel sauce, which is put into the middle of the cupcakes after they are cooled, is a perfect compliment for the light brown sugar cake. The carmel buttercream is a perfect topper that brings it all together! They turned out good, I brought them to work and they were a hit! These I adapted from a recipe I found on www.bakersroyale.com. They have chopped Andes mints in the cake batter and a delicious minty/creme de mint buttercream frosting. :) I do think I'd like to make an adaptation of these with Thin Mint Girl Scout cookies next year when they are available! Yum! :)
I made these the day I made 13 dozen cupcakes ~ it was crazy but it was fun!! I never got to try these, but my husband and cousin did and they both said they were delicious. I don't see how you can go wrong with jello cheesecake, cake, cream cheese and orange juice!! :) I think these would be a big hit with kids!
The recipe can be found HERE - it was also in my BH&G cupcake magazine I bought at the local grocery store. These were the third and final cupcake on the Mother's Day Bouquets. I should have made this recipe the first time around when I was looking for a Lemon cupcake recipe because none of the Brown Eyed Baker's recipes have disappointed me, but I didn't. I wasn't surprised one bit when it turned out a HUGE winner in my book. These cupcakes are a little bit of work, but are TOTALLY worth it. They have a wonderful lemon flavor and the lemon curd inside adds an extra kick of flavor - so yummy! I omitted the Limoncello simply because I didn't have it and was bringing these to a workplace and a place where children were around. :) Better safe than sorry, and honestly, I don't think you'll miss it one bit if you don't include it.

These cupcakes were also part of the Mother's Day Bouquet pictured below - they were a big hit and were a nice change from the usual cupcake flavors I've tried. These were part of my Mother's Day Floral Bouquet - I had originally wanted to make banana Carmel cupcakes but the grocery store had no ripe bananas, so apple it was!
These were very easy and have a delicious flavor - I didn't use the recommended Carmel frosting from the recipe, but I made my Carmel butter cream frosting that I use on the snickers cupcakes. You can find the recipe HERE. |
