I saw these yummy looking cupcakes on one of my favorite blogs, How Sweet Eats, and immediately wanted to make them. They were easy, and Andy liked them, I am not 100% sold. I thought the frosting was a little much. I think if the frosting was paired up with a chocolate cupcake, and used in a lesser amount, perhaps some as filling, that might be a better match. Maybe just adding some chocolate ganache to the tops of these would take them up a notch, too. :) Either way, they're worth a try if you like Peanut Butter! :)

I realized yesterday that I've had this blog a year!! And even better, people are still reading it!! Thank you to all who visit this blog, and make me happy when I look at the site visitor count! :) Hopefully I've provided you with some recipes you have made at home, or have baked you some cupcakes or cak I have some exciting things coming up this year including a couple weddings and hopefully lots more cupcake and cake making!

The cake was chocolate with a layer of oreos in the middle frosted with cream cheese frosting. From what I heard, it was a huge hit. ;-)
I know there are many, MANY UND fans out there, hopefully they will appreciate my newest creation. . .I thought about going the easy route and doing the green/white more geometric logo that the college has, but this is what I think of, when I think of UND. :) Plus, I always like a challenge. I'm not happy with the writing on the cake, the frosting was a bit too stiff...better luck next time! :)
Here are some photos of a cake I made this weekend. The flavor was Key Lime with cream cheese frosting. I made all the decorations on it with Wilton Gum Paste. :) You can find the recipe for the cake HERE. The cupcakes that went along with the cake were the Cherry Almond Vanilla flavor. I used half a cherry and piped frosting on the top to kind of mimic a fishing bobber. :)
These were the final kind of cupcakes I made for Christmas, I'm a little late at getting them posted, but better late than never, right? I had made a different recipe for Red Velvet cupcakes before and hadn't been too impressed. A coworker suggested I try a recipe from Paula Deen, so that's what I went with this time around. I think they definitely had more flavor than the previous recipe I had tried. The frosting was a huge hit with my almost 2 year old Niece! Who doesn't love cream cheese frosting!? :) I'm still not sure what all the hype over "red velvet" is about, but to each their own.

This stuff is DELICIOUS and super addicting!!! These were cupcake #3 out of the 4 kinds I made for the Christmas gatherings. In keeping with the Christmas theme for cupcakes, I was looking for something different rather than the normal Chocolate/White cupcakes. I found this recipe for Gingerbread cupcakes and thought I'd give them a try! I am glad I did because I thought they were delicious! I found the recipe on Tidy Mom blog, which you can find HERE. If I had more time, I would have made little gingerbread men to put on top, but I opted for the chocolate "snowflakes" instead for a garnish. These made the whole house smell wonderful, both in and out of the oven!

I hope you all had a wonderful holiday season and got to relax a little in-between all the hustle and bustle that seems to go along with this time of year! I had the opportunity to make some cupcakes for Christmas gatherings, which I will post over the next couple weeks. My goal for 2012 is to post at least one new recipe a week - that seems pretty do-able, don't you think?! :) The first of the Christmas cupcakes is the Peppermint Mocha Cupcake which I found the recipe for on Baker's Royale website, which you can find HERE. The cupcake recipe was easy and delicious. I did not make the frosting as stated in the recipe, I made a basic butter cream to which I added peppermint extract and crushed candy canes. I added a candy cane on top and added a little "North Pole" to make it a little festive. :) Enjoy! This is another recipe I found on Pinterest! (Can you tell I have an addiction to that site??) These cookies are delicious! They're basically a peanut butter cookie base with chopped up butterfingers mixed in. I love Peanut Butter and I love Butterfingers, so I knew these were gonna be good!
