Another new recipe I tried - I thought the flavor combination sounded quite interesting, and it was! A rich chocolatey cupcake with coffee flavor, coconut flavored butter cream, topped with toasted coconut and a strong coffee flavored drizzle. YUM! :) I found the recipe HERE, on one of my favorite blogs - check her out, she's a funny girl! Again, sorry for the crappy photo...I need to get some tips on photographing without daylight. Any tips are welcome! :)
These were one of the first kinds of cupcakes I made in the new oven. I had never "browned" butter before, but it was very easy, you just need to keep a close eye on it. The recipe I found said it added "depth" to the flavor, I didn't have but more than a bite of the cupcakes, so I can' t accurately say whether or not I agree with that statement or not. :) They were good, and the cinnamon frosting was also delicious! I found the recipe HERE. I did just use butter/cinnamon/vanilla/powdered sugar for the frosting instead of the recipe on the blog.

I guess I have been on hiatus, but it was due to my oven deciding to die, and leaving us without an oven for around 2 months. We survived, but I sure did miss baking! On a good note, we did get a brand new shiny oven ... here's a picture of my new baby! :) It's a Kenmore convection oven with 4 racks!! I love the big door and it's so bright inside, you can see everything baking! :) I know, it doesn't match the other stuff, but I decided if things are going to start not working, I'd much rather move towards Stainless Steel appliances, than to try find stuff in "bisque" down the road. :)
