A couple new things I've tried -- Chocolate cupcakes with Butterfinger frosting (awesome!) and Mini Cheesecakes! The ones pictured are peanut butter cheesecake with oreo crust topped with chocolate ganache and chopped up pb cups.

I made this scrumptious little number for Easter! I found the recipe on Pinterest, seriously, if you haven't checked it out yet, you need to!
You can find the recipe HERE. It was fairly easy, I only ended up using half of the amount of the Carmel layer, the rest got put in the fridge for ice cream toppings at a later date! I also omitted the nuts due to a cousin with nut allergies, better safe than sorry! :) Anyways, I recommend this if you like Carmel, chocolate and cheesecake (and really, who doesn't?!!)!! I made these tasty little bars this past weekend when I went to a nearby lake to spendsome time with the girls. They were very easy and FABULOUS!! They took a couple steps, but none of them very time consuming and the end result was well worth it! I will definitely be saving this recipe for the future - I think next time I might swirl in some Carmel in the cheesecake! I doubled the recipe and made 2 8x8 pans, I also had forgot to add in the chocolate chips before I put the crust in the oven, so I just sprinkled some on the crust as soon as it came out of the oven and let them melt. Delicious!!

I used paper liners because that's what I had on hand, but I would strongly suggest buying the foil liners that stand alone and make these on a cookie sheet.
I found the recipe HERE. I didn't have any graham crackers on hand so I ground up 4 packages of Nature Valley cinnamon granola bars and used those for my crust. It actually turned out really tasty! I can't say I'd make them as individuals again as a pan would be a little less work, but I would definitely recommend them in either form! |
