These I adapted from a recipe I found on www.bakersroyale.com. They have chopped Andes mints in the cake batter and a delicious minty/creme de mint buttercream frosting. :) I do think I'd like to make an adaptation of these with Thin Mint Girl Scout cookies next year when they are available! Yum! :)

I made these tasty little bars this past weekend when I went to a nearby lake to spendsome time with the girls. They were very easy and FABULOUS!! They took a couple steps, but none of them very time consuming and the end result was well worth it! I will definitely be saving this recipe for the future - I think next time I might swirl in some Carmel in the cheesecake! I doubled the recipe and made 2 8x8 pans, I also had forgot to add in the chocolate chips before I put the crust in the oven, so I just sprinkled some on the crust as soon as it came out of the oven and let them melt. Delicious!!
The recipe can be found HERE. I made these the day I made 13 dozen cupcakes ~ it was crazy but it was fun!! I never got to try these, but my husband and cousin did and they both said they were delicious. I don't see how you can go wrong with jello cheesecake, cake, cream cheese and orange juice!! :) I think these would be a big hit with kids!
